China (57 Mt) alone produces nearly half the world's pork, more than four times the United States, the second producer (12.6 Mt) — pork is the historic staple meat there, and China still bears the mark of the 2018-2019 African swine fever epidemic, which cut its herd by over a third before a rapid rebuild.
