China (6 Mt) alone produces over 30 times as much as France (188 kt), the world's second producer — a scale gap with no equivalent among the meats covered by Atlas, reflecting both China's demographic weight and a culinary duck tradition far more central than elsewhere in the world, with France staying well ahead of any other Western country thanks to foie gras and magret.
